    You are too darn cute…that is great that you found something to eat. How is the snaking going? Miss you and Ken snacking together…LOL

    That was wonderful! I loved the cabbage crunch (assuming it was added after you baked the enchiladas). Other spices you could have used for the sauce would be garlic powder, pinch of cloves, oregano, California chili powder (also cumin, I think you used that). Spices were the most important, so always cruse the spice section in the grocery store when you’re there to see what looks good. When you want sauce (or gravy, etc.), think “rue”: butter, flour, chicken broth (to make the consistency you want for enchilada sauce or a creamy soup). A little tomato sauce or tomato puree at the end. If you had cheese to top it off that would have been good too. But your recipe made me hungry, and of course, inspired. Very good!!

    I had a kale spinach pie today from Trader Joe’s, side dishes of red kidney beans, quinoa and thai peanut secret sauce that Peter and I put together.
    I see that you have a response from your Real Mother, well this is your Real Older Sister! I wonder if you can take some of our family favorites and turn them into a Vegie dish? What about Tuna Casserole? Chicken Mole’?
